How this wine tastes
There are only a few hectares of Souvignier Gris in the whole of Switzerland - a real rarity!
Our oldest vines are 10 years old. The beautifully ripe grapes were hand-harvested, destemmed and then left on the skins overnight in the cold before being pressed the following day.
Fermentation and ageing took place partly in ceramic spheres and used barriques, for extra depth of maturation aromas. A 500-litre Swiss oak cask lends a light note of wood, while the steel tank preserves the freshness.
