How this wine tastes

The grapes grow in the Salento region of Apulia. Harvesting takes place in mid-September. After pressing, the skins are immediately separated from the must so the colour does not become too intense. The must is fermented in stainless steel tanks at 17-18°C for approximately 15-20 days. The young wine remains in stainless steel tanks until bottling.
