Get to know Louis Moreau
The Moreau family has been established in Chablis since 1814, when the cooper Joseph Moreau came into vine land through marriage. Louis Moreau, sixth generation, learnt his craft in California and has run the family estate in Beine since 1994. As everywhere in Chablis, work is done exclusively with Chardonnay, across all four levels of the appellation.
The Clos des Hospices, in the family since 1904
In 1904, Jean Joseph Moreau bought the Clos des Hospices, a plot in the Grand Cru Les Clos directly above the River Serein. To this day it remains the flagship of the house. Added to this are plots in the Grands Crus Valmur, Vaudésir and Blanchots, as well as Premiers Crus on both sides of the valley.
Stainless steel and wild yeasts
Since 2014, Louis Moreau has relied almost entirely on stainless steel and spontaneous fermentation with wild yeasts, in small tanks that follow the individual plots. The aim is the clear, austere fruit that Chablis stands for, without any interference from wood.
The step towards organic
In 2022, the family founded the successor estate «Père & Filles», Father and Daughters, and registered it with Ecocert for conversion to organic farming. Since the 2025 harvest, these wines have been certified. Frost remains the great risk of the north: on cold spring nights, candles burn between the rows.
