Masso Antico Fiano del Salento IGT

The growing area for this aromatic white wine is the Salento region (Apulia), the heel of Italy's boot. The hot daytime temperatures are somewhat mitigated by the cooling sea breeze: this creates an optimal climate for the vines. This way the grapes of the Fiano variety dry very slightly on the vine through an evaporation process (appassito). This brings about the desired concentration of aromas in the grape berry. Hand-picked, the harvest is brought to the press house, pressed and fermented. Ageing takes place in stainless steel tanks and part of the wine matures in wooden casks.
